Ingredients: 8 Corn Tortillas 1 can 15 oz of black beans, drained and rinsed (beans can be mashed if preferred) 2 tsp of taco seasoning or to taste ½ diced red onion (optional) ½ cup fresh or frozen corn ½ cup shredded lettuce ½ cup salsa Diced avocado (optional) Chopped cilantro (optional)
Step 1: Drain and rinse black beans Step 2: Add beans and corn to a pan. Add taco seasoning and stir to combine. Cover and cook for about 5 minutes until it is all warm. While the beans and corn are heating up you can warm your corn tortillas. Step 3: Assemble tacos. Add bean and corn mixture to tortillas. Top tacos with lettuce, salsa, cilantro (optional), and avocado (optional). Serve and enjoy!
