3 Bean Chili Ingredients: 1-15 oz can of black beans 1-15 oz can of kidney beans 1-15 oz can of pinto beans 1 to 1 ½ cups Soy Protein chunks or curls (organic, optional) 1 yellow onion, diced 2 garlic cloves, minced 1 organic green bell pepper, diced 1 can diced tomatoes or diced fresh tomatoes 2 cups organic vegetable stock 1 TBSP chili powder or to taste ½ tsp turmeric Salt (Himalayan) and pepper to taste
Step 1: In a large pan sauté onions and garlic with ¼ cup of organic vegetable broth until translucent. Add green bell pepper, chili powder, and turmeric and cook for an additional 2 to 3 minutes.
Step 2: Add vegetable broth, tomatoes, beans, and soy protein (optional). Simmer on low for about 25 minutes. Add salt and pepper to taste.
